I love this simple dish!
3 cans of beans.
Use any kind you llike!
2 green onions chopped, using the
1/2 tsp sea salt
1/4 tsp fresh ground pepper
4 tomatos sliced 1/4 in. thick
2 bunches of fresh, whole basil leaves
1 cup pesto (homemade or store bought)
Makes about 4 servings
Drain and rinse beans, put into a bowl. Add in the chopped green onions, salt, pepper and pesto. Mix well and refrigerate for one hour. To make each serving arrange four tomato slices on a plate. Place basil leaves on top of tomatoes. Scoop bean pesto salad on middle of tomatoes and basil. Serve immediately.
