I decided to make a change, this new year, in the way I am eating. I need to cut down on the cheese for sure. It’s my downfall. I love cheese on just about anything. Cauliflower = yes! Pasta = yes! Garlic bread = yes! On crackers = yes! Cheese on cheese = yes!
This 2017 I am making a change for the better, at least for my LDL level. I have been a vegetarian for half of my life, and I have been teetering on the line of vegan for some time. What kept me from converting completely was the need for cheese!
My lovely friend, Holly, recently introduced me to this magical ingredient called nutritional yeast. This stuff is amazing! Not only is it tasty sprinkled on practically everything, it is healthy too! Nutritional yeast is packed with B vitamins and is a source of complete protein. It contains folates, thiamine, riboflavin, niacin, selenium and zinc. It is also known to boost energy too. Wow! Sounds great right? It really is.
I was skeptical at first because this stuff looks more like yellow fish food. I sprinkled it on my salad and I was instantly intrigued by the nutty, salty and smoky flavor. I decided to add it to a pasta dish with roasted garlic, olive oil and some Italian herbs. The nutritional yeast actually becomes a sauce when mixed with olive oil or vegetable broth and it can be used to thicken sauces too. The taste was fantastic and it satisfied my craving for cheese.
I can’t wait to experiment with nutritional yeast in other recipes soon. It’s low in calories and has zero cholesterol, so my body will be happy and so will my doctor!
