I love to make homemade pizza.
I believe the reason I love homemade pizza is because I can’t seem to find a pizzeria pizza I like. I blame it on the sauce. “The secret’s in the sauce!” (name that movie). Bad sauce equals bad pizza in my book. Either it’s too bland or too sweet. So, because I can’t seem to be satisfied with pizzeria pizza, I make my own. Here is a recipe for one of my favorite variations of pizza.
Spinach, caramelized onion and feta cheese pizza! Perfect for this vegetarian. This one’s all mine! That’s because I am the only one in my family who likes feta cheese. Lucky for me!
I like to start with some homemade pizza dough. Recipe will follow. Make sure you put the dough into an oiled bowl or the gooey dough will stick right to it and you will have a mess on your hands! And in the bowl!
Thinly slice up half of a large sweet onion. Add about three tablespoons of unsalted butter to a pan. Don’t pay attention to my very ugly pan. I have put it to good use over the years! Add a little olive oil then throw in the onions.
Saute those onions until they are soft and golden brown. They will also have a sticky consistency because of the sugars in the onion cooking out. Yummy! Turn off the heat and set aside.
Take your pizza dough and place it on a lightly oiled sheet pan. Press out the dough until it is about 1/4 inch thick. Don’t worry about making it perfectly round. It’s supposed to look rustic. It’s homemade man!
Place the onions evenly all over the dough.
Next, pile on the fresh spinach. Don’t worry about putting too much on. The spinach wilts in the oven so you want to make sure you have enough on there.
Now add the feta cheese. Add as much or as little as you like. At this point you could add a little sweet ingredient if you want. I like to also add sliced pears on top of the feta. I didn’t have any pears. The sweetness from the pears and the salty-ness of the feta go really nice together.
In addition to the feta cheese I also added some fresh parmesan cheese.
Into the oven at 400 degrees for about 25 minutes or until the crust is starting to brown and the cheese on top is melted. At this time take a whiff of the air. Ahhh, it smells like pizza house heaven!
Look how the top is a nice golden brown and the spinach is wilted to just the right amount. I love the rustic look of it as well. Oh how I wish I had a pizza oven from Italy. If you want a little spice, grab the crushed red pepper flakes then drizzle a little more olive oil over the top. Delizioso!

Simple Spinach, Onion and Feta Cheese Homemade Pizza
Pizza dough recipe:
Makes 2 pizzas
3 cups flour
1 tablespoon sugar
1 teaspoon salt
1 package regular active dry yeast
3 tablespoons olive oil
1 cup warm water
Add the yeast to the warm water and let sit for 5 minutes. In a mixing bowl add the flour, salt, sugar and mix slowly. Add in the olive oil while still mixing until combined. Pour in the water and yeast mixture. Mix until the dough starts to come together. Put the dough into another bowl lightly drizzled with olive oil. Cover with plastic wrap and let sit for 30 minutes.
To assemble the pizza:
Take the dough from the bowl and set on a lightly oiled baking sheet. Press out the dough until it’s about 1/4 inch thick. Add on the sauteed, caramelized onions in an even layer. Pile on fresh spinach. Top with feta cheese. Add sliced pears if you wish. Top with shredded parmesan cheese. Bake at 400 degrees for 25 minutes or until the crust is beginning to brown and the top is golden and the cheese is melted. Remove from oven. Sprinkle with crushed red pepper flakes if desired. Drizzle a light amount of olive oil on top.
