Seven Layer Salad

Every Sunday, for years, we would all get together for a family dinner. There would be around 20 family members all seated around my Aunt Mary’s dining room table. This table was to me, the heart of my whole family. At this table there was always conversation and laughter, always. Also at this table there were signature dishes that my Aunt Mary always prepared. This Seven Layer Salad recipe was always a staple dish, and always on the table during our family dinners.

1 head of iceberg lettuce finely cut
Red and Green bell peppers diced finely
2 green onions diced finely
2 tomatoes diced finely
2 cups thawed green peas
2 cups mayonnaise
1 cup fried bacon diced finely
2 cups cheddar cheese

In a trifle serving dish, layer the following ingredients: lettuce, red & green peppers, tomatoes, onions, peas. Spread the mayonnaise evenly over the top of the vegetables. Sprinkle the cheddar cheese over the mayonnaise and top with the diced bacon. Serve this at your next family get together!
