Just a few ingredients make these spuds scrumptious!
I have a beautiful friend named Arze, and she can cook! When I say cook, I mean she will spend all day (usually with her mother) making amazing mediterranean dishes. Arze only uses fresh, authentic ingredients to make the most delectable dishes. Fresh herbs, juicy citrus, aromatic spices are staples in her kitchen. When we get together for visits, I know Arze has prepared something fantastic for her guests to enjoy.
Here is one of my favorite dishes from Arze that I like to call, Arze’s Potatoes!
I will never eat boring, mayonnaise slathered potatoes again! This is my new fav and it’s so simple to make! Just a few ingredients like – spuds (aka potatoes), fresh mint, lemon, garlic, olive oil, salt & pepper. That’s it!
Peel & cube the potatoes and boil them until fork tender. Drain them and set aside.
Finely chop about two tablespoons of the fresh mint and add it to the potatoes. Juice one lemon and pour it in to the bowl.
Chop up about 3 cloves of garlic. I like these potatoes to be extra garlic-y! Add in the salt and pepper to taste.
Now, drizzle in the olive oil generously until the potatoes begin to change into a light golden color. The potatoes absorb the oil quickly so you really have to add in quite a bit of oil. I would say about 1/2 cup or so. Mix the potatoes and keep adding the oil until you think the potatoes are coated well enough.
The aroma of the mint, garlic and lemon smells divine since the potatoes are still a little warm. You can eat this right away or chill in the refrigerator.
That’s it! So simple and yet so divine. I love Arze’s potatoes, and I love Arze too!
